This is my Thermomix conversion of my muffin recipe. This recipe has, for over a decade, been my serious go-to because almost everything can be substituted to cater for dietary needs or to clean out the fridge. Whether made i in the Thermomix or by the regular recipe, they turn out scrumptious every time! It’s awesome to have those recipes that are fail-safe for any circumstance. So, add this one to your collection right away.

Ingredients
  • 400 grams fruit fresh, canned or frozen, bananas kiwifruit, apples, pears, stonefruit and berries in any combination, cut into 1-2cm pieces
  • 150 grams butter cut into chunks, or oil of choice
  • 450 grams liquid anything from juice, syrup, and/or milk of any variety
  • 2 large eggs or replace, per egg, with 1 tablespoon of chia seeds and 85 grams of water
  • 600 grams flour of any variety to suit your dietary needs
  • 40 grams baking powder (divide by 5 for the number of teaspoons if making smaller batches)
  • 180 grams sugar white or castor
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
Instructions
  1. Add any hard fruit that is not already in 1-2 centimetre pieces into the bowl. Blend for 6 seconds at speed 5. OR Add any soft fruit that is not already in 1-2 centimetre pieces into the bowl. Blend for 4 seconds at speed 4. Put aside fruit in a Thermoserver or other bowl with a lid.
  2. Melt butter in the Thermomix for 4 minutes at 50 degrees Celsius at speed 6.
  3. Add liquid and eggs (or equivalent). Blend for 4 seconds at speed 4.
  4. Add flour, baking powder, first portion of sugar and salt. Beat into liquid for 6 minutes at speed 6.
  5. Return fruit to the bowl and mix into the batter for 2 minutes at speed 4.
  6. Coat medium-sized muffin or cupcake pans with butter or oil. Distribute the batter between the pans based on the quantity you have selected.
  7. Mix together the remaining sugar and cinnamon. Sprinkle over the muffins batter.
  8. Bake at 200 degC for 13 minutes or until the centre springs back. Leave in pans to cool for 5 minutes before removing them for storage or to serve.
  9. Serve plain or with butter, margarine or cream. Can be frozen for use later.
